Fresh, zesty and gently spicy — perfect as a light starter, summer lunch or seafood platter hero.

This Lemon Drop Chilli Kingfish Ceviche is light, bright and especially good for enjoying during summer, or any time you’d like fresh flavour hit. Very fresh sashimi-grade kingfish is marinated with lime juice and salt, then tossed with cucumber, red onion, coriander, avocado and a little lemon drop chilli for a fresh citrusy kick.

The recipe came about after my foodie friend Don gave me some gorgeous home-grown lemon drop chillies from his garden. Lucky me! Also known as ají limón, lemon drop chillies have a bright, citrus-like flavour with clean, lively heat. They’re usually considered medium-hot to hot, so start with a little and add more to taste.

Ceviche is fresh, delicious and super simple to make. This modern Australian version is inspired by Latin American flavours and is perfect for easy summer entertaining. Serve it in lettuce cups, with corn chips, or on crisp tostadas as a light entrée, summer lunch or seafood platter addition.

Prep the limes

  1. Juice 3 limes. See Tip 4.

Prep the fish

  1. Dice the fish into small, even pieces - approximately 1cm cubes - no larger, and place in a chilled bowl.

Add the citrus and salt

  1. Pour over enough lime juice to lightly cover the fish. Add ½ tsp sea salt flakes and gently stir to combine.

Marinate

  1. Cover and refrigerate for 10–20 minutes, depending on how firm you like the fish. Thin or delicate pieces need less time.

Prep the fresh bits

  1. While the fish is marinating in the lime and salt... finely slice the lemon drop chilli, finely dice ½ a Lebanese cucumber and ¼ red onion, chop ¼ cup coriander and dice ½ avocado. See Tip 2.

Check the fish

  1. Remove fish from the fridge. Taste to check for firmer texture, enough salt, enough lime.

Add the fresh bits

  1. Stir through the lemon drop chilli, red onion, cucumber and coriander.

Finish and serve

  1. Gently fold through avocado and mango, if using. Taste and adjust with extra salt, lime or chilli.
    Serve immediately.

Tips

  1. Food Safety Note - Use very fresh sashimi-grade fish from a trusted seafood supplier, keep it cold and serve straight away. Lime juice firms the fish, but it does not make unsafe fish safe.
  2. How hot are lemon drop chillies?
    Lemon drop chillies have a fresh, citrus-like flavour and a medium-hot to hot chilli kick. If you’re unsure of the heat, start with ½ a lemon drop chilli. You can always add more. For me one lemon drop chilli is the perfect amount of heat.
  3. Substitute: If you can’t find lemon drop chillies, use ½–1 long red chilli or half a jalapeno chilli, plus a little lime zest for a similar fresh, citrusy flavour.
