Description

A creamy onion white sauce made with the soft brown onion cooked in the pressure cooker alongside corned silverside. Finished with cracked black pepper and sea salt flakes, it’s the perfect accompaniment to silverside, potatoes, carrots and peas.

Silverside, boiled potatoes, carrots and peas wouldn’t be quite the same at my table without a generous spoonful of onion white sauce. I use the brown onion cooked in the pressure cooker with the silverside — by then it’s beautifully soft and mashes almost to a purée, adding gentle sweetness and extra flavour. Cracked black pepper and sea salt flakes bring it all to life and make the flavours really pop! Simple, creamy and made for spooning over everything on the plate.

'Total Time' assumes the onion has already been cooked with the corned silverside. See Corned Silverside recipe.

Or see alternative onion cooking option — this option also makes the sauce suitable for vegetarians, provided the onion is cooked in water rather than the silverside liquid.

Allow an extra 5 minutes for preparation and 20–30 minutes for cooking, which can overlap with making the sauce.

Prepare the onion

  1. Remove the cooked onion from the silverside liquid and drain well. Mash thoroughly with a fork until almost smooth, or use whole and whisk it into the sauce.

  2. Alternative option – Cooking the onion separately: Peel 1 brown onion and cut it into quarters. Place in a small saucepan, cover with water and bring to the boil. Reduce the heat and simmer gently for 20–30 minutes, or until very soft and easily mashed with a fork. Drain well, mash until almost smooth, then add to the white sauce as directed.

Melt butter and add flour

  1. Melt 30 g butter in a medium saucepan over medium-low heat. Add half the flour – about 15 g, and whisk for 1–2 minutes until smooth.

  2. Add the remaining half of the flour, and whisk until smooth. Keep it pale and taking care not to let it brown.

Whisk in the milk

  1. Add half the milk – about a quarter of a cup, a little at a time, whisking until smooth.

  2. Then add in the remaining milk and whisk until smooth.

Thicken the sauce

  1. Bring to a gentle simmer, whisking constantly. Reduce the heat and cook for 3–5 minutes, whisking until thick enough to coat a spoon.

Add the onion and season

  1. Stir in the whole or mashed onion and cook gently for another 2 minutes. For the whole onion, mash into the sauce.

  2. Season with 1/4 tsp sea salt flakes and 1/4 tsp cracked pepper. This is a good time to do a taste test. The onion and cracked pepper will really make the flavour pop!

Serve

  1. Pour generously over sliced silverside, boiled potatoes, carrots and peas.

Enjoy!
